The organ meat disappears into the beef flavor, so you get every gram of the nutrition without any of the taste or texture that keeps most people from cooking with organs. Use it exactly like regular ground beef.

Processed on site, never shipped off. Fort McCoy runs its own USDA-certified facility on the ranch — no hauling to a distant plant, no months held in a feedlot. Cattle stay on their pasture until the day of processing, which means less stress: more humane, and better meat for it. Processing runs weekly, under their own quality control from pasture to vacuum seal.
