Ground fresh from 100% grass-fed and grass-finished cattle raised on open Florida pasture at Fort McCoy Ranch. A clean 90/10 lean-to-fat ratio makes this the everyday cut — versatile enough for burgers, tacos, meatballs, chili, or anything you'd normally reach for ground beef to make. Portioned into one-pound bricks, individually vacuum-sealed and flash-frozen, so you can pull exactly what you need.

Processed on site, never shipped off. Fort McCoy runs its own USDA-certified facility on the ranch — no hauling to a distant plant, no months held in a feedlot. Cattle stay on their pasture until the day of processing, which means less stress: more humane, and better meat for it. Processing runs weekly, under their own quality control from pasture to vacuum seal.
