If you've spent time reading about raw milk, you've probably run into the terms A1 and A2. Some brands make a big deal about it. Some people say they can drink A2 milk after years of thinking they were lactose intolerant. Some skeptics call the whole thing a marketing gimmick.
The truth sits somewhere in the middle, and it's worth understanding — especially if you've had trouble with conventional milk in the past but haven't figured out why.
What A1 and A2 Actually Are
Milk contains two main groups of protein: whey and casein. About 80% of the protein in cow's milk is casein, and most of that casein is a specific type called beta-casein. Beta-casein comes in different variants, and the two most common are called A1 and A2.
Structurally, A1 and A2 beta-casein are nearly identical. They differ by a single amino acid at position 67 of the protein chain — histidine in A1, proline in A2. That one-letter difference changes how the protein breaks down when you digest it, and that's where the whole conversation starts.
The Genetic Backstory
All cows originally produced A2 beta-casein. That was the default for thousands of years. Sometime around 8,000 years ago, a genetic mutation appeared in European cattle populations that changed the A2 variant to A1. Over centuries of selective breeding — mostly for higher milk yield — the A1 gene spread through Holstein and other high-production breeds that now dominate industrial dairy.
Today, most cows in commercial dairy herds carry at least one copy of the A1 gene, and most conventional milk on grocery shelves is a mix of A1 and A2. Some older breeds, though, kept the original A2-only genetics. Jersey and Guernsey cows produce mostly A2 milk. Goats, sheep, water buffalo, and camels all produce A2 by nature — they don't have the mutation at all.
What Happens During Digestion
When you digest A1 beta-casein, your gut releases a peptide called beta-casomorphin-7, or BCM-7. A2 beta-casein doesn't produce BCM-7 in meaningful amounts because the proline in position 67 blocks the enzymatic cut that would release it.
BCM-7 has been the subject of dozens of studies over the past twenty years. Some research suggests it can cause digestive discomfort, inflammation, and slower gut transit time in people who are sensitive to it. Other studies show no clear effect. The science isn't fully settled, but a growing body of evidence points to BCM-7 as a plausible explanation for why some people react to conventional milk without technically being lactose intolerant.
What's clearer, in everyday experience, is the pattern: many people who assumed they couldn't tolerate dairy can drink A2 milk without the bloating, stomach discomfort, or brain fog they used to associate with regular milk. That's not a promise or a medical claim — bodies vary. But it's a common enough report that it's worth knowing about.
A2 vs. Lactose Intolerance
These are two different issues, and it's easy to confuse them.
Lactose intolerance is about a sugar — lactose — not a protein. It happens when your body doesn't produce enough of the lactase enzyme to break lactose down. Symptoms show up whether the milk is A1, A2, pasteurized, or raw. If you're genuinely lactose intolerant, switching to A2 milk won't necessarily fix it.
A1 sensitivity is a different mechanism. It's a reaction to how the A1 beta-casein protein breaks down, not to milk sugar. Some people who thought they had lactose intolerance actually had A1 sensitivity all along, and figured that out only when they tried A2 milk and had no reaction. Others have both. And some people tolerate everything just fine.
The only way to know which category you're in is to try. If A2 milk works for you and A1 doesn't, that tells you something.
How Raw A2 Milk Fits In
Raw milk and A2 milk are two separate things that often overlap. You can have pasteurized A2 milk from a grocery store. You can have raw milk that's a mix of A1 and A2 depending on the herd's genetics. Or you can have raw A2 milk, which is what most of our farm partners produce.
Raw A2 combines both properties: the protein is easier for most people to digest, and the milk keeps its native enzymes, cultures, and cream — nothing heated out, nothing homogenized. For people who came to raw dairy hoping to feel better after drinking milk, raw A2 is often the version that actually delivers on that hope.
What Raw Dairy Club's Herds Produce
All three of our partner farms produce A2 milk from their primary dairy herds:
- Redland Dairy Farm milks a Jersey herd. Jerseys are one of the older European breeds that never picked up the A1 mutation at scale, and Jersey-only herds typically produce A2 milk.
- Simon's Farm raises goats. All goat milk is A2 by nature — goats don't carry the A1 mutation at all, so there's no breed-selection question. Simon's also raises a small mixed-breed cow herd that produces the cow butter and yogurt we carry from them.
- Paradise Farms works with partner herds selected for A2 genetics.
What to Expect When You Try It
Most people don't notice a taste difference between A1 and A2 milk. What they notice is what happens afterward. If you've had a low-grade bloated feeling after drinking regular milk that you've written off as "just how milk affects me," and it goes away when you drink A2, that's a strong signal.
Give it a full week if you're testing. Some reactions are immediate, others take a few days to show up as a clear pattern. And try it on its own — not mixed into coffee or cereal — at least once, so you can pay attention to how it actually sits.
A Quick Reality Check
A2 milk isn't a cure-all. It's not necessarily healthier in a nutritional sense — the fat, protein, and mineral content is nearly identical to A1 milk. What A2 offers is a protein structure that seems to be gentler for a lot of people, and that gentleness is what makes the difference for the people it helps.
If you drink regular milk without any issues and you feel great, there's no urgent reason to switch to A2. If you've been avoiding dairy or feeling off after drinking it, A2 is worth trying before you rule out milk entirely.
